Blue Zone Longevity Feast

If you aren't familiar with Dan Buettner's book The Blue Zone you might want to check it out.  It's a cookbook about a  "Longevity Lifestyle"  for understanding how to eat healthy for your mind, body and soul.    My meal above consists of white fish with olive oil, garlic, lemon juice and herbs de provence. Beautiful Red beets with cooked spinach - pitted olives, and raw radishes  * Radish - A fabulous detoxer;  If you ever feel like an inner cleanse, eat a radish or two.  A key to a long and happy life, look at your diet, have a purpose everyday, call your friends and family, be grateful and exercise.   The Bluezone

The above salad consist of watermelon, arugula, kale, mint, jalapeños and goat cheese.  A simple salad dressing made with Dijon mustard, rice vinegar, lemon juice and a touch of sea salt.  I love the contrast of the watermelon and the spicy.  I chopped portabello mushrooms, garlic, cherry tomatoes, olive oil, and lemon juice, then I sautéed the mushrooms in the pan for 3-5 minutes.

White fish marinated in lemon juice, olive oil, herbs de provence, and garlic.  Bake in the oven on top of foil in a pan for 10 minutes at 450 degrees.  

We added an Italian Red with our meal mixed in with a little Latin Jazz. My husband and I have an enormous desire to see our teenage son with his family one day, as most families do, and we understand one way to accomplish that combines healthy eating habits and exercise.  I love to share anything I read or see about nutrition and stories about inspiring people with our son.  These are simple meals that require just a bit of planning and care.  When you cook with good intentions and love, that energy  goes right into your meals and your body, for you and your loved ones. To eat healthy cost a bit more, but you will notice a difference in how you feel, and in the long run you will have fewer trips to the doctor.  Mother Nature has provided us with all we need to keep our bodies going, why not educate ourselves on how foods can enhance our lives. It's a small investment of time to a longer, healthier and happier way to live.  Today with all the blogs, tv shows, movies, and apps, we are fortunate to have unlimited information to encourage us to stay healthy. Simple Shrimp And Kale Salad

Here is a favorite dish for a healthy Monday night dinner.  Sometimes Monday's can be a little hectic in my house.  I like to go for a healthy meal to set the tone for the week, at least until the weekend arrives.  I added a little white rice on the side, no bigger than my fist.

Marinate the shrimp in garlic-dash of salt, pepper, herbes de provence, olive oil, cherry tomatoes, 1 lemon and a few slices of jalapeños.  We like it spicy in this house.   Kale Salad Dressing - 1 tablespoon of dijon mustard, minced garlic, white wine vinegar, olive oil, dash of salt & pepper and juice from 1 lemon.  Mix together for your taste buds.  Grill the shrimp in a pan on the stove for about 5 minutes. (depending on your stove's temperature)  

A few simple ingredients.   Dinner prep time took me about 30 minutes. I put on my favorite Pandora Station- Tropical Jazz and I enjoy every minute.

Tonight we had our shrimp dinner with an Italian Red - Lavignone - I usually enjoy a nice white wine with seafood, but tonight we decided to embrace our love for an Italian red. (probably because I'm reading Eight Hundred Grapes).... great read by Laura Dave

I am not a chef, but I do immerse myself in what I do.  My hope is you share with me, what you enjoy cooking, because when we can become a community we can be happy, when we are happy we live longer, when we live longer, we can teach the young, when we teach the young, we create a brighter future.

Looking At The Bright Side Of Cauliflower

I never really liked or disliked cauliflower, but it appears to be a popular superfood right now.  Cauliflower is an excellent source of vitamin C, vitamin K, folate, pantothenic acid, and vitamin B6.  It's a really good source of choline, dietary fiber, omega-3 fatty acids, manganese, phosphorus, and biotin (need that for the hair).  Additionally, it is a good source of vitamin B2, protein, vitamin B1, niacin, and magnesium.  Have your cauliflower your way- raw or cooked.  Lanvin Sunglasses

Spicy grilled shrimp with cherry tomatoes & habanero peppers (just a few) and grilled cauliflower - I mix the cauliflower in a bowl with a little salt, pepper, olive oil, and toss in a few onions.  Place in the oven at 400 degrees for 20-25 minutes (depending on your oven) mix in with the shrimp and place into the Butter Lettuce cups for Spicy Shrimp & Grilled Cauliflower Tacos.  For a bit of seasoning, I mix spicy mustard with olive oil, lemon juice, white wine vinegar, garlic, salt & pepper.  Sprinkle the dressing onto your tacos.  Along with the cauliflower and shrimp, I have included yellow beets with parsley.

Simple, Healthy and Tasty
